¡El mix más económico!

Mix de harinas sin gluten

Os muestro lo fácil que es realizar tu mezcla de harina y no tener que comprar un preparado comercial.

Los preparados comerciales tienen muchos ingredientes para que nuestras masas salgan perfectas según sea para repostería o para realizar pan.

Existen muchos preparados listos para comprar por si no tenéis los ingredientes necesarios en casa, aunque salen un poco  mas caros que los caseros, siempre son muy socorridos para una urgencia. 

Se pueden realizar estos preparados en casa, aunque ya veremos que se puede realizar recetas sin tener tantos tipos de ingredientes ¡Y saldrán riquísimas nuestras preparaciones!

Solo necesitamos la mezcla de 2 ingredientes variados:

  1. Mezcla de harinas
  2. Mezcla de almidón
1.- Mezcla de harinas (40%)

Cuando indica que se debe de utilizar de mezcla de harinas un 40% quiere decir que, para hacer 500 gramos de mix – panificable deben ser 200 gramos de esta mezcla de harina. En el caso de un mix de 1 kg, añadiríamos 400 gramos.

Existen diferentes tipo de harinas a utilizar:

 –  Arroz (20%)

 –  Maíz (40%)

 –  Garbanzo (10%)

 –  Trigo sarraceno (10%)

Os muestro este tipo de harinas, pero existen mas sin gluten. Estas son las mas usadas pero si queréis probar con mas tipos de cereal o legumbres.

 
2.- Mezcla de almidón (60%)

Cuando nos indica que nuestro mix debe de tener un 60% de mezcla de almidón quiere decir que, para un total de 500 gr de mix debemos añadir 300 gr de almidón, así para 1 kg de mix sería 600 gr de mezcla de almidón.

  • Fécula de patata
  • Maíz (Maizena)
  • Yuca dulce o agria
    • 5-10% en pan
    • 25% repostería

Los almidones son muy importantes para nuestras recetas sin gluten. Podéis probar con estos y luego ir probando sabores nuevos.

El conservar nuestras harinas es muy importante, el mejor lugar para hacerlo es en estos tipos de tarros siempre de cristal. Así siempre estarás tranquila de que no cogen olor ni que se ponga mala. Se debe indicar el tanto por ciento de los ingredientes de nuestro mix o panificable sin gluten.  A mí me gustan de este tipo, pero podéis comprar los modelos que  mas se ajusten a vuestras necesidades. ¡Hay muchos para elegir y muy económicos!
